Chaque jour. Non seulement pour pouvoir travailler avec un couteau aussi aff\u00fbt\u00e9 que possible, mais aussi parce qu&rsquo;aiguiser les couteaux a un effet apaisant. Quoi de mieux pour pr\u00e9parer un repas ?<\/p>\n<p>Nous avons observ\u00e9 cette sagesse chez Messen Huyghe, \u00e0 Gand. Nous y avons assist\u00e9 \u00e0 un cours \u00ab d&rsquo;aff\u00fbtage de couteaux sur une pierre \u00e0 aiguiser \u00bb de la marque japonaise Kai pour le chef \u00e9toil\u00e9 Micha\u00ebl Vrijmoed et ses compagnons de cuisine. Il a \u00e9t\u00e9 agr\u00e9ablement surpris par le r\u00e9sultat pr\u00e9cis, les diff\u00e9rentes lames et l&rsquo;utilisation agr\u00e9able de l&rsquo;appareil.
